Kielbasa ‘N Pasta Recipe

Ingredients:

  • 16 ounces (450 grams) penne noodles
  • 1 pound (450 grams) smoked kielbasa sausage
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces/800 grams) diced tomatoes
  • 1 can (6 ounces/170 grams) tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon red pepper flakes (optional for heat)
  • Salt and black pepper to taste
  • Fresh basil leaves, chopped (for garnish)

Preparation Instructions:

  • Slice the kielbasa sausage to desired thickness.
  • Finely chop the onion.
  • Mince the garlic.
  • Drain the diced tomatoes

Cooking Instructions:

Tip: When you get to step #8, mix the two parts in the pot in which you cooked your penne noodles. It will give you more room to work with when you add your kielbasa and sauce to your rotini noodles.

  1. Cook the penne noodles according to the package instructions until al dente. Drain the cooked pasta and set aside.
  2. Heat olive oil in a pan on medium-high heat.
  3. Add the sliced kielbasa sausage and cook until browned on both sides, then remove and set aside.
  4. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent (slight Carmel color) and fragrant.
  5. Add the drained diced tomatoes, tomato paste, dried oregano, dried basil, and red pepper flakes (if using) to the skillet. Stir well to combine all the ingredients.
  6. Reduce the medium heat to low and let the sauce simmer for 10 minutes, allowing the flavors to meld together. Season with salt and black pepper according to your taste.
  7. Return the cooked kielbasa sausage to the skillet and stir it into the tomato sauce. Let it simmer for an additional 5 minutes.
  8. Add the cooked penne noodles to the skillet, tossing them in the sauce until well coated. Cook for another 2 minutes to let the flavors meld together.
  9. Remove from heat and garnish with freshly chopped basil leaves. I like to sprinkle on some Parmesan cheese too.
  10. Serve hot and enjoy your delicious Kielbasa N’ Pasta!

To reheat, it is best to use a microwave or stovetop with a little added water.

For optimal freezing, it is recommended to freeze the sauce separately and add freshly prepared pasta upon serving.

Scramble the eggs over low heat, stirring constantly until the eggs are done as you like. Sprinkle shredded or grated cheese over the top and remove from the heat. Cover for a few minutes to allow the cheese to melt, and serve.
