I believe cooking should be simple, especially with young children around. Trust me on this one.

This recipe follows that belief. It combines everything in one pan. This method saves time and makes it easy for kids to help with the cooking.

Letting my girls help with the cooking has encouraged them to try, and hopefully enjoy, the dish they helped to make.

It’s worked for me, and I’m certain it will work for you too.

Chicken and Vegetable Skillet Recipe

Ingredients

  • Chicken Breasts: 2, boneless and skinless
  • Broccoli: 1 cup, cut into florets
  • Carrots: 1 cup, thinly sliced
  • Bell Pepper: 1, any color, sliced
  • Garlic: 2 cloves, minced
  • Olive Oil: 2 tablespoons
  • Salt: to taste
  • Black Pepper: to taste
  • Paprika: 1 teaspoon

Preparation

  1. Preheat your skillet over medium heat and add olive oil.
  2. Season the chicken with salt, pepper, and paprika. Place it into the skillet.
  3. Cook each side for 5-7 minutes or until golden and cooked through.
  4. Remove the chicken and set aside on a plate.
  5. In the same skillet, add more oil if needed. Toss in the garlic, broccoli, carrots, and bell pepper.
  6. Stir-fry the vegetables for about 5 minutes, until they start to soften.
  7. Once cooked, slice the chicken into strips and return it to the skillet with the vegetables.
  8. Mix everything well and cook for another 2-3 minutes.

This dish is best served from the pan to the plate. You can serve it over rice or noodles if you wish.

Additional Notes

Feel free to adjust the vegetables according to what your kids like. My girls aren’t too fussy, so I use whatever fresh vegetables I have on hand.

Keeping the chicken moist is key. Don’t overcook it.
