There’s nothing quite like a classic comfort food dish. Beef rump roast falls into that category. It’s a meal I enjoyed growing up and still enjoy making for my family today.

What Is Rump Roast?

Rump roast, aka bottom round roast or round tip roast, is not one of the choice cuts of beef. Back in the day, it wasn’t always popular. It was considered a “poor man’s” meal.

But times change, tastes change, and sometimes we get nostalgic for old favorites. And rump roast, when properly prepared and cooked, is tasty, tender, and flavorful. My family loves it!

I’ve got a recipe for you that brought back memories of my childhood but with a twist. I will show you how I use strips of bacon to wrap a rump roast.

Bacon wrapping is not a new technique. It was originally created to ensure that pork roasts were cooked properly, but it can do the same for a beef roast.

How to Make Bacon-Wrapped Rump Roast

Making this rump roast is quick and easy. Here’s what I do. I start with

Ingredients

  • 1 Rump Roast – 2.5 – 3 lbs
  • 1 lb of Bacon – Thick-Sliced Bacon Strips

I add four simple ingredients to season the roast.

  • 2 tablespoons of onion powder
  • 2 teaspoons of black pepper
  • 2 tablespoons of garlic salt
  • 2 ounces of sweet and hot yellow ground mustard

I like sweet and hot mustard, but any mustard will do.

I use garlic salt to save time, but you can use garlic powder and coarse salt instead. You could add other spices like oregano, thyme, and parsley if you want to, but I like keeping it simple.

Preparation And Cooking Instructions

Preparing a rump roast wrapped in bacon only takes me about 20 minutes. It shouldn’t take you much longer, even if you’re not experienced in the kitchen.

  1. Mix your dry ingredients in a bowl.
  2. Apply the mustard evenly to the rump roast
  3. Sprinkle the dry ingredients evenly on all sides of the rump roast
  4. Basket weave your bacon for the top and bottom of the roast

Cooking Time And Temperature

Place your roast into a 375°F oven and cook for 30 minutes to an hour. I suggest using a meat thermometer to check the internal temperature if you want a certain doneness.

Additional Tips

Bacon adds flavor and fat to the meat. I prefer using thick-sliced bacon when wrapping a roast to reduce the risk of burning when cooking at a higher temperature.

Can I Prep In Advance?

Yes, you can prepare your bacon-wrapped rump roast in advance and store it for up to 24 hours in the refrigerator. If you plan on serving it immediately, I’d recommend prepping it the night before.

Can I Use An Air Fryer?

Yes, you can make a bacon-wrapped rump roast in an air fryer, but for safety reasons, I prefer a pressure cooker instead because of all the bacon grease. If you use a pressure cooker, cook at 375°F for 6 to 9 minutes per pound.

If you use an air fryer, place the bacon-wrapped rump roast into your air fryer and cook for about an hour at 350° F. But be careful. All the bacon fat could start a fire in the fryer.

Using an air fryer or pressure cooker is a great way to ensure you get crispy, delicious bacon and juicy, tender meat on the inside!
