Apple and Green Onion Rice with Chicken Recipe

This recipe combines the savory flavors of the chicken and garlic & herb concentrate with the sweetness of the apples, creating a delicious and satisfying dish.

Ingredients

  • 2 cups of rice
  • 4 cups of water
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons of vegetable oil
  • 2 green onions, chopped
  • 2 apples, peeled, cored, and diced
  • 2 tablespoons of fish sauce
  • 1 tablespoon of Campbell’s Rich Garlic & Herb Concentrate
  • Salt and pepper to taste

Directions

  1. Cook the Rice:
    • Rinse the rice under cold water until the water runs clear.
    • In a large saucepan, combine the rinsed rice and water. Bring to a boil.
    • Reduce the heat to low, cover, and let the rice simmer for about 15-20 minutes or until the water is absorbed and the rice is tender.
    • Remove from heat and set aside.
  2. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper on both sides.
    • In a skillet, heat the vegetable oil over medium-high heat.
    • Add the chicken breasts and cook for about 6-8 minutes per side until cooked through and no longer pink in the center.
    • Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into thin strips.
  3. Sauté the Apples and Green Onions:
    • Add the chopped green onions and diced apples in the same skillet used for the chicken.
    • Sauté them over medium heat for about 3-4 minutes until slightly softened.
  4. Combine the Ingredients:
    • Add the cooked rice to the skillet with the apples and green onions.
    • Drizzle the fish sauce and Campbell’s Rich Garlic & Herb Concentrate over the rice.
    • Stir well to combine all the ingredients and let them cook for an additional 2-3 minutes to heat everything through
  5. Serve:
    • Transfer the apple and green onion rice to a serving dish.
    • Arrange the sliced chicken on top of the rice.
    • Garnish with additional chopped green onions if desired.
    • Serve hot, and enjoy!

Additional Tips

You can use any apple you like in this recipe. I prefer using a tart apple like Granny Smith, but you could also use a sweeter apple like Honeycrisp.

For a vegetarian or vegan version, leave out the chicken and add 1/2 cup of cooked lentils or chickpeas to the rice.

Brown rice and wild rice can also be used instead of white rice. My girls are not big fans, so I stick with white rice.

You can use any vegetable oil you have on hand. Olive oil and safflower oil are good alternatives.

If you have any leftovers, they can be refrigerated in an airtight container for up to 3 days.

Fish Sauce: What Is It And Why Use It

One of the ingredients I listed above is fish sauce. If you’re unfamiliar with fish sauce, it’s a staple ingredient in many Southeast Asian cuisines, such as Thai, Vietnamese, and Filipino. It acts as a natural flavor enhancer and helps season the dish without overpowering it.

Since it pairs well with a wide range of flavors, including sweet, savory, and tangy, I use fish sauce regularly when I cook and use it in different recipes beyond traditional Asian dishes.

The trick when using fish sauce is to use it in moderation, as its flavor can be potent. Start with a small amount, taste the dish, and adjust accordingly to achieve the desired balance of flavors.

You can buy fish sauce online or at your local grocer in the Asian food section. Keep in mind that all Asian sauces, like soy sauce, sweet and sour sauce, and fish sauce, are high in sodium, so be sure to read the labels if this concerns you.
